1Combine 1 medium sliced onion, 3 sliced tomatoes, 1/2 cup chopped fresh coriander, 1/2 cup chopped mint leaves, and 2 tbs lemon juice in a bowl and mix well.
2Heat 1 cup oil in a large pot and add 4 large sliced onions. Fry for 10-12 minutes until golden brown.
3Remove half of the fried onions from the pot and set aside for later.
4Add green cardamom, black cardamom, black peppercorns, cinnamon sticks, cloves, and bay leaves to the remaining onions in the pot.
5Add green chilies and mix well.
6Add ginger garlic paste and cook for 2-3 minutes.
7Add 1-2 tbs water and mix.
8Stir in coriander powder, turmeric powder, garam masala powder, paprika powder, red chili powder, and salt. Mix well.
9Add the onion and tomato mixture from the first step. Mix and cook until oil separates.
10Add 1 kg chicken with bones. Mix until it changes color.
11Cover and cook for 8-10 minutes.
12Cook on high flame until oil separates, then remove the chicken from the pot into a separate bowl.
13Layer half of the soaked and 3/4th boiled rice at the bottom of the pot.
14Spread the cooked chicken over the rice layer.
15Layer the remaining boiled rice over the chicken.
16Sprinkle mace powder and nutmeg powder over the rice.
17Combine yellow food color with 1-2 tbs water and pour over the rice. Garnish with the reserved fried onions.
18Cover and steam cook for 10 minutes on low flame.
