Place beef, onion, ginger, garlic, biryani masala, and water in the instant pot.

Pressure cook on high.

Drain the broth, separating the meat, and set aside.

Wash the rice until the water runs clear and set aside.

Add oil to a wide pan and sauté sliced onions until dark brown.

Add biryani masala to the pan.

Add the washed and drained rice and sauté.

Add the measured broth, meat, lemon juice, and green chilies.

Simmer on medium-high heat until most of the water is absorbed.

Cover with a lid and cook on the lowest heat setting.

Let the rice rest undisturbed.

Garnish with chopped cilantro.

2.2 lbs beef, cubed
as needed water
1 whole onion
2 inch piece ginger
3-4 clove garlic
1 packet biryani masala
4 cup sela basmati rice
7 cup broth
1 tsp biryani masala
0.5 cup oil
1 whole onion, sliced
squeeze lemon
3 whole green chili
to taste garnish cilantro, chopped

Tips
Substitute ginger paste for fresh ginger (2 tablespoons).
Substitute garlic paste for fresh garlic cloves (2 tablespoons).
The biryani masala packet already contains salt, so do not add more.
Using a wide pan is essential to prevent the rice from becoming mushy.
Sautéing the rice prevents it from sticking.
Do not lift the lid during the final rest period.
