Funché de Bacalao

Serves 1

Directions

  1. 1Start by boiling your cod or haddock, whatever you have, it's all good, it'll taste the same. And we're going to add a bay leaf there.
  2. 2Then we add a bit of achiote oil there. This will give it color and will also help with our veggies.
  3. 3Now we're going to add some cilantro, as much onion as your heart tells you, red, orange, yellow, and green peppers there. Any color you have, don't worry. You're the cook, you're in control!
  4. 4Let these veggies sweat well and let the onions go translucent. And we'll be good.
  5. 5Here now we're going to add a cup and a half of water there. And from the water where we boiled the cod, add the measure of a guajataca. That's the best way I can explain it, okay? Don't look at me with that tone of voice. There.
  6. 6And add your cod there.
  7. 7And give it a good stir, to avoid any lumps. Now, this is eating well. This is eating well! Funche!
  8. 8Serve it on a plate.
