1Mix mutton keema with ginger garlic paste, green chilli paste, onion paste, papaya paste, salt, caraway seeds, yellow chilli, nutmeg, cinnamon, black pepper, khushbu masala, and white pepper. Allow it to marinate for 30 minutes.
2Heat desi ghee in a pot, add the marinated keema, and sauté well.
3Add water and cook, then add the fried onions.
4Whisk the malai and add it to the keema mixture. Stir until well combined and fully cooked.
5Add roasted chana powder to thicken the mixture and stir to cook.
6Perform a 'dhungar' (smoking) process using cloves and a little desi ghee in a small vessel placed in the center of the pan, covering with a lid.
7Garnish with dried rose petals and fresh coriander before serving.
