Directions

  1. 1Wash the vegetables in a baking soda bath.
  2. 2Roughly chop the tomatoes, jalapeños, white onion, cilantro, and garlic.
  3. 3Place all chopped vegetables into a food processor and pulse until it reaches a salsa consistency.
  4. 4Transfer the mixture into a large mason jar using a funnel.
  5. 5Add salt equal to 2% of the total weight of the salsa.
  6. 6Add a squeeze of lemon juice.
  7. 7Press down the mixture in the jar, cover with a lid, and let ferment on the counter for 4 to 5 days.

  • jalapeño, seeded
  • white onion
  • cilantro, roughly chopped
  • garlic, roughly chopped
  • 2% percent of total weight salt
  • lemon juice (optional)

Tips

  • You can throw in other peppers like bell peppers or sweet peppers based on what you have in your fridge.
  • Salt should be 2% of the total weight of the salsa mixture.
