High Protein Cheeseburger Hot Pockets

Directions

  1. 1Add all-purpose flour to a bowl.
  2. 2Add 0% Greek yogurt to the bowl with flour.
  3. 3Mix until you get doughy clumps.
  4. 4Knead the clumps into a big dough ball.
  5. 5Divide the dough ball into 8 equal balls.
  6. 6Spray a hot pan with cooking spray.
  7. 7Add lean ground beef to the pan.
  8. 8Let the beef get a crispy sear.
  9. 9Add diced onion to the pan.
  10. 10Add smoked paprika, garlic powder, salt, and pepper to the pan.
  11. 11Mix well.
  12. 12Add beef stock to the pan.
  13. 13Add light cream cheese, ketchup, mustard, and diced pickles to the pan.
  14. 14Mix until nice and creamy.
  15. 15Roll out a dough ball.
  16. 16Add 1/8 of the cheeseburger beef mixture onto the rolled-out dough.
  17. 17Add low-fat cheese on top of the beef mixture.
  18. 18Fold in the sides of the dough like this.
  19. 19Pinch to seal the hot pocket.
  20. 20Flip the hot pocket over.
  21. 21Press down gently on the hot pocket.
  22. 22Repeat for the remaining 8 hot pockets.
  23. 23Place the hot pockets in a pan with some cooking spray.
  24. 24Cover the pan with a lid.
  25. 25Cook for 3-4 minutes on each side until golden and crispy.
  26. 26Store them wrapped in the freezer.
  27. 27Reheat when ready to eat.

  • 1 tsp ketchup
  • 1 tsp mustard
  • 60 g diced pickles
  • 25 g low fat cheese
