Start with 100 grams of soy sauce.

Whisk in 2 grams of agar agar.

Let it simmer for just a minute or two, then take it off the heat.

Let it cool slightly, but not so much that it sets.

Once it feels warm, not hot, transfer it to a squeeze bottle.

Drop it into cold neutral oil that's been sitting in the freezer for about 30 minutes.

Drop from a little height for the best pearls and keep the bottle moving so they don't clump together.

Strain out the oil (you can save it for next time).

Give your faux caviar a quick rinse.

Serve with sushi or other dishes.

Tips
Let it cool slightly, but not so much that it sets.

They keep in the fridge for up to 2 days in an airtight container, so you can prep them ahead.
