Directions

  1. 1Soak soya chunks in salt and hot water for some time.
  2. 2Mix flour, salt, sugar, and curd, then knead with a little water to form a soft dough.
  3. 3Cover the dough and set aside.
  4. 4Squeeze out all water from the soya chunks and put them in a blender jar.
  5. 5Add coriander, mint, green chilies, onion, ginger, and garlic to the blender and grind.
  6. 6Mix the ground soya mixture with boiled potato, rice flour, red chili powder, coriander powder, salt, cumin powder, garam masala, and chaat masala.
  7. 7Take a small portion of the mixture and shape it into small tikkis.
  8. 8Shallow fry the tikkis on a hot pan until golden brown on both sides.
  9. 9Prepare the chutney spread by grinding coriander, mint, cumin, ginger, garlic, black pepper, black salt, lemon juice, and curd.
  10. 10Take small balls from the dough, dust with dry flour, and roll them into thin, large rotis.
  11. 11Half-cook the roti on one side on a hot tawa, then flip it.
  12. 12Apply oil on the half-cooked side and cook.
  13. 13Flip and cook the other side with oil.
  14. 14Place the prepared tikki on the paratha, lightly mash it, and spread the chutney.
  15. 15Add chopped cucumber, tomato, and onion.
  16. 16Squeeze lemon juice and sprinkle chaat masala.
  17. 17Fold the paratha and enjoy the soya tikki roll.
