Directions

  1. 1Combine flour, cornmeal, baking powder, sugar, and salt in a bowl.
  2. 2In a separate bowl, whisk together eggs, olive oil, and milk.
  3. 3Add the wet ingredients to the dry ingredients and mix until combined.
  4. 4Place a Silpat or parchment paper on a baking sheet and lightly grease it with cooking oil.
  5. 5Using a large spoon, drop 4 dollops of batter onto the prepared baking sheet.
  6. 6Using oiled hands and a bench scraper, flatten the batter into squares about ½ inch thick.
  7. 7Using a bench scraper, cut diagonal lines from corner to corner on each square, creating an X shape.
  8. 8Bake at 300°F (150°C) for 45 minutes to 1 hour, or until golden brown.
  9. 9Remove from oven and let cool completely.
  10. 10While the bread is baking, prepare bamboo leaves by wiping them clean with a paper towel.
  11. 11Once the bread is cool, wrap it in two bamboo leaves, tying it with butcher's twine.
