Directions

  1. 1Start with a pound each of ground beef and ground lamb.
  2. 2Add in grated onion for moisture and flavor.
  3. 3Go in with Greek yogurt and extra virgin olive oil, paprika, cumin, coriander, oregano, salt, and pepper.
  4. 4Give it a mix until it is very well combined.
  5. 5Add the meat mixture onto a piece of parchment.
  6. 6Place another piece of parchment on top.
  7. 7Press it down, and then use a rolling pin to spread it out into a super thin layer all the way to the edges.
  8. 8Remove the top sheet, then fold it over all the way up.
  9. 9Place these on a baking sheet and bake at 400° for about 30 minutes, draining off some of the fat and juice halfway through.
  10. 10Unroll it.
  11. 11If you want it a little more brown, you can pop it back into the oven for another 5 minutes.
  12. 12Finish it off with a little squeeze of lemon.
  13. 13Serve it up with warm pita, lots of meat, onion, tomato if you want, some fresh parsley, and our yogurt sauce.
  14. 14Add a little bit of hot sauce too.

Tips
