1In a bowl, mix 500 grams of strong flour, 1 teaspoon of salt and 7 grams of dry yeast.
2Add 325 ml of warm water to the mixture and mix well.
3Turn the dough out onto a floured surface and knead until smooth and elastic.
4Divide the dough into four 150-gram portions and roll them into balls.
5Place the dough balls onto a baking sheet sprinkled with semolina, cover with a damp cloth, and let them proof for at least two hours in a warm place.
6Once the dough has proofed, take one ball and flatten it into a disc.
7Spread a thin layer of tomato sauce on the dough, starting from the middle.
8Drizzle with a little olive oil and sprinkle with parmesan cheese.
9Top with pieces of fresh mozzarella, fresh basil and a little more olive oil.
10Bake in a preheated oven at 220°C for 7 minutes or until golden brown.
