The Ultimate Jiffy Cornbread Casserole

Directions

  1. 1Drop a pound of ground beef and a half of an onion into your favorite skillet.
  2. 2Dice the onion.
  3. 3Season and brown the beef.
  4. 4Drain the beef.
  5. 5Add a cup of spring water and 8 ounces of tomato paste.
  6. 6Mix this all real nice.
  7. 7Bring the whole thing up to a simmer for about 2 to 3 minutes.
  8. 8Transfer the mixture into a greased 8x8 baking dish.
  9. 9Get a mixing bowl.
  10. 10Add one box of Jiffy cornbread mix, one whole egg, a third cup of whole milk, and one can of drained corn.
  11. 11Whisk this until it's all beautifully combined.
  12. 12Cover the beef mixture with freshly shredded cheddar cheese first.
  13. 13Pour the cornbread mixture on top of the cheese.
  14. 14Spread the cornbread mixture out evenly.
  15. 15Put the whole thing in the oven at 400 degrees for about 20 minutes.
  16. 16When it comes out, give it the toothpick test to make sure the cornbread is done.
  17. 17If it is done, throw some butter on it.
  18. 18Let it cool off for a little bit.
  19. 19Once it's ready, get a spatula, cut out a piece, and put it on a plate.
  20. 20Grab a fork, scoop up a big old bite, and put the whole thing in your mouth.
