French Onion Meatloaf

Directions

  1. 1Preheat oven to 375°F and lightly grease a loaf pan or baking dish.
  2. 2In a large bowl, add ground beef, onion soup mix, breadcrumbs, eggs, milk, diced onion, garlic, Worcestershire sauce, pepper, and shredded cheese.
  3. 3Use clean hands or a spoon to gently mix everything together until combined.
  4. 4Shape the meat mixture into a loaf and place it into the prepared baking dish.
  5. 5Bake for 40 minutes.
  6. 6While the meatloaf bakes, melt butter in a skillet over medium heat.
  7. 7Add sliced onions and cook for 12–15 minutes, stirring often, until soft and golden brown.
  8. 8Stir in beef broth and brown sugar.
  9. 9Let the mixture simmer for 2–3 minutes.
  10. 10Remove the meatloaf from the oven and spoon the onion mixture evenly over the top.
  11. 11Return to the oven and bake another 15–20 minutes, or until the center reaches 160°F.
  12. 12Let the meatloaf rest for 5–10 minutes before slicing so it stays juicy.
  13. 13Spoon extra onion gravy over each slice before serving.

  • 1 cup shredded mozzarella or Swiss cheese
  • 1 large onion, sliced
  • 2 tbsp butter
  • 0.5 cup beef broth
  • 1 tbsp brown sugar
