Directions
- 1Slice and dice the chuck roast into pieces.
- 2Season the chuck roast with Vaquero Steak seasoning.
- 3Add olive oil and Sazon Tropical to the seasoned chuck roast.
- 4Slice and dice the bell peppers, tomato, and onion.
- 5Combine the chuck roast and veggies in the Instant Pot.
- 6Add a cinnamon stick and guajillo chilis to the Instant Pot.
- 7Add minced garlic and beef consommé.
- 8Cook in Instant Pot for about 45 minutes to 1 hour.
- 9Remove meat from the Instant Pot and shred.
- 10Blend some of the cooking liquid with the large chunks of veggies.
- 11Pour the blended mixture back into the Instant Pot and stir.
- 12Slice and dice the onions and cilantro.
- 13Heat the griddle.
- 14Dip tortillas in the sauce and place on the griddle to crisp.
- 15Assemble the tacos: layer cheese, meat, onions, and cilantro on the tortillas.
- 16Fold the tacos and serve with beef consommé and limes.

- 6 flour tortillas
- 1 package Quesadilla cheese
- 1 Oaxaca cheese
- 1 bunch cilantro
- 4 limes
