Green Chile Chicken Enchiladas

Directions

  1. 1Mix the meat of a rotisserie chicken with sour cream, half of a taco seasoning packet, and 1 cup of cheese.
  2. 2In a separate bowl, mix a 10 oz can of green enchilada sauce with 1 cup of heavy cream, a 4 oz can of diced chilies, and the other half of the taco seasoning packet.
  3. 3Whisk the sauce mixture until well combined.
  4. 4Wrap approximately 15 corn tortillas in some damp paper towels and microwave them for about 1 minute and 30 seconds to prevent breaking.
  5. 5Place a spoonful of the chicken mixture in each tortilla and roll them up.
  6. 6Spread another can of enchilada sauce in the bottom of a 9x13 baking dish.
  7. 7Place the rolled enchiladas into the baking dish.
  8. 8Spread another cup of cheese over the enchiladas.
  9. 9Pour the cream sauce mixture over the cheese and enchiladas.
  10. 10Top with two more cups of cheese.
  11. 11Bake at 400 degrees Fahrenheit for about 20 minutes, or until the cheese is golden brown and bubbly.
  12. 12Top with some fresh cilantro (if you don't dislike the taste).
  13. 13Serve with any toppings you like, such as sour cream and jalapeños.
