Directions

  1. 1Heat about 1 inch of vegetable oil in a skillet over medium heat.
  2. 2Fry the flour tortillas one at a time until golden and crispy on both sides, then drain on paper towels.
  3. 3In another skillet, cook the ground beef until browned and fully cooked. Drain excess grease if needed.
  4. 4Stir in the taco seasoning and water, then simmer for 3 to 4 minutes until thickened.
  5. 5Warm the refried beans in a small saucepan or microwave.
  6. 6Spread refried beans onto one crispy tortilla, then top with seasoned beef and another tortilla.
  7. 7Spoon enchilada sauce over the top tortilla and sprinkle generously with shredded cheese.
  8. 8Repeat with the remaining tortillas to make 4 Mexican pizzas.
  9. 9Bake at 400°F for 8 to 10 minutes until the cheese is melted and bubbly.
  10. 10Top with diced tomatoes, green onions, sour cream, and jalapeños before serving.
