Homemade Texas Pete Clone Hot Sauce

Directions

  1. 1Add four cups of vinegar to a stainless steel pot.
  2. 2Add 40 cayenne peppers, with their tops cut off (wearing gloves).
  3. 3Add 20 cloves of garlic.
  4. 4Add two tablespoons of lime juice.
  5. 5Add two bay leaves.
  6. 6Add two teaspoons of salt.
  7. 7Add two teaspoons of paprika.
  8. 8Bring the mixture to a boil.
  9. 9Stir the mixture while it's coming to a boil to mix in the salt and paprika.
  10. 10Once boiling, turn the heat down and simmer for 20 to 30 minutes.
  11. 11After simmering, remove the bay leaves and transfer the mixture to a blender.
  12. 12Blend until the mixture is smooth.
  13. 13Pour the blended mixture through a sieve.
  14. 14Ladle the hot sauce into jars.
  15. 15For canning, use a regular hot bath method for five minutes.
