Directions

Add four cups of vinegar to a stainless steel pot.

Add 40 cayenne peppers, with their tops cut off (wearing gloves).

Add 20 cloves of garlic.

Add two tablespoons of lime juice.

Add two bay leaves.

Add two teaspoons of salt.

Add two teaspoons of paprika.

Bring the mixture to a boil.

Stir the mixture while it's coming to a boil to mix in the salt and paprika.

Once boiling, turn the heat down and simmer for 20 to 30 minutes.

After simmering, remove the bay leaves and transfer the mixture to a blender.

Blend until the mixture is smooth.

Pour the blended mixture through a sieve.

Ladle the hot sauce into jars.

For canning, use a regular hot bath method for five minutes.

2 teaspoons Paprika

Tips
Be really careful when cutting the tops off cayenne peppers; wear gloves.
When blending, ensure bay leaves are removed.
For a less watery hot sauce, simmer uncovered before blending or simmer longer after blending.
To preserve, use a regular hot bath method of canning for 5 minutes.
