High-Protein, Low-Carb Kimbap

Directions

  1. 1Sprinkle sesame seeds on the kimbap rolls.
  2. 2Cut the kimbap rolls into bite-sized pieces.
  3. 3Peel and julienne the carrot.
  4. 4Slice the red cabbage very thinly.
  5. 5Crack 5 large eggs into a measuring cup.
  6. 6Add a pinch of salt to the eggs.
  7. 7Whisk the eggs until well combined.
  8. 8Pour a thin layer of whisked eggs into a lightly oiled nonstick pan.
  9. 9Cook the egg layer until just set, like a flat omelette, without browning.
  10. 10Roll the cooked egg layer and slice it into thin strips.
  11. 11Quickly sauté the julienned carrots in a pan with a little oil.
  12. 12Drain a can of tuna and put it into a bowl.
  13. 13Add mayonnaise to the tuna.
  14. 14Add salt and pepper to the tuna mixture.
  15. 15Mix the tuna, mayo, salt, and pepper until creamy to create the tuna mayo filling.
  16. 16Place a sheet of gim/nori (seaweed paper) on a flat surface.
  17. 17Spread a thin, even layer of egg strips across the bottom 2/3 of the nori sheet.
  18. 18Add carrots in a horizontal line on top of the egg strips.
  19. 19Add tuna mayo filling in the center.
  20. 20Add sliced red cabbage next to the tuna mayo.
  21. 21Starting from the bottom, roll the kimbap tightly, gently pulling back to keep everything compact.
  22. 22Lightly dab the edge of the nori with a little water to seal it.
  23. 23Repeat for additional rolls depending on the amount of filling left.
