Texas Trash Chicken Casserole

Directions

  1. 1Pour enough enchilada sauce to cover the bottom of a 9x13 baking dish.
  2. 2Plop scoops of refried beans into the enchilada sauce, as many scoops as you have pieces of chicken.
  3. 3Put a piece of chicken on each pile of beans.
  4. 4Season the chicken generously with taco seasoning.
  5. 5Drop a block of softened cream cheese into a mixing bowl.
  6. 6Add a can of diced green chilies, a cup of shredded cheese, a quarter cup of enchilada sauce, and a tablespoon of taco seasoning to the bowl.
  7. 7Whisk the sauce mixture until beautifully combined.
  8. 8Plop a scoop of the cream cheese mixture on top of each piece of chicken.
  9. 9Spread the sauce mixture out on top of the chicken.
  10. 10Bake in the oven at 350 degrees Fahrenheit for about 30 minutes.
  11. 11Cover the casserole with shredded cheese when it comes out of the oven.
  12. 12Put it back in the oven for 5 to 10 minutes, until the cheese is melted and the chicken is cooked through.
  13. 13Sprinkle chopped green onions on top for garnish.
