1In a bowl, mix together warm water, honey, and yeast. Cover with a towel and let sit for 5-10 minutes to activate.
2Add melted butter and salt to the mixture and stir.
3Add flour one cup at a time, combining well after each addition.
4Knead the dough in the bowl until most of the flour is incorporated, then transfer to a lightly floured surface and knead for about 5 minutes until you get a smooth ball.
5Oil a bowl with olive oil, and roll the dough around to coat. Cover and let rise for 1.5 hours.
6Punch down the dough to release air bubbles.
7Divide the dough in half.
8Flatten and stretch each half of the dough to the length of a 9x5 loaf pan. Roll up tightly and pinch the seams together to seal.
9Place each dough in a greased 9x5 loaf pan, cover and let rise for another 1-1.5 hours.
10Bake at 350°F for 30 minutes.
11Remove loaves from the pans immediately and let cool completely on a wire rack before slicing and serving.
