  3. 3Add a teaspoon of chopped fresh thyme leaves, two teaspoons of kosher salt, and a teaspoon of freshly ground black pepper.
  4. 4Cook over medium-low heat, stirring occasionally, for about 10 minutes, until the onions are translucent but not brown.
  5. 5Remove from heat and add three tablespoons of Worcestershire sauce, a third of a cup of chicken stock, and one tablespoon of tomato paste.
  6. 6Mix everything together and set aside to cool slightly.
  7. 7Add the onion mixture to 2.5 pounds of ground chuck.
  8. 8Add 1/2 cup of dried breadcrumbs.

  11. 11Form the meatloaf into an even loaf on a half sheet pan.
  12. 12Spread 1/2 cup of ketchup over the meatloaf.
  13. 13Bake at 350 degrees for about an hour and 10 minutes, or until an instant read thermometer inserted into the center reads 155-160 degrees.
  14. 14For extra moist meatloaf, place a pan of very hot water underneath the meatloaf in the oven.
  15. 15Garnish with parsley and serve.
