1Grab an onion and slice it into thick onion rings.
2Carefully peel off the membrane from each onion ring.
3Place the onion rings in a bowl of cold water and let them soak for about 15 minutes.
4In a bowl, combine 100 grams of plain flour, 50 grams of corn flour, 1 teaspoon of baking powder, 1 teaspoon of salt, 1 teaspoon of garlic powder, and 1 teaspoon of smoked paprika.
5Whisk until fully combined.
6Remove the onion rings from the water and pat them dry with paper towels.
7Coat the onion rings in flour to help the batter stick.
8Add about 200ml of sparkling water to the flour mixture and whisk until smooth. Add a little more water if the batter is too thick.
9Heat your oil to 180°C.
10Dip each onion ring in the batter and then fry in the hot oil until golden and crispy.
