Pick 4 clean, young fig leaves.

Wash the fig leaves well.

Toast each leaf on each side in a dry skillet until they become fragrant and deepen in color, and curl slightly.

Combine sugar and water in a small saucepan over medium heat.

Stir until the sugar dissolves.

Add the toasted fig leaves to the saucepan.

Simmer gently for 10-15 minutes (do not boil hard).

Turn off the heat and let the leaves steep for 30-60 minutes for more flavor.

Strain the syrup into a jar or bottle.

Keep the syrup in the fridge for up to 2 weeks.

Add ice to a glass.

Pour coffee into the glass with ice.

Add milk to the coffee.

Pour the fig leaf syrup into the coffee.

Tips
Don t let the leaves burn when toasting; a light toast is enough to bring out the coconutty oils.
For more flavor, let the syrup steep for 30-60 minutes after simmering.
