Ezekiel Bread

Directions

  1. 1Add lentils to a saucepan.
  2. 2Add water to the saucepan and cook the lentils.
  3. 3Cover the saucepan with a lid and let the lentils cook.
  4. 4Add water to a small bowl.
  5. 5Add active dry yeast to the water and stir to bloom.
  6. 6Add whole wheat flour to a large mixing bowl.
  7. 7Add barley flour to the mixing bowl.
  8. 8Add millet flour to the mixing bowl.
  9. 9Add spelt flour to the mixing bowl.
  10. 10Stir the flours together.
  11. 11Add salt to the flour mixture.
  12. 12Add the cooked lentils to the flour mixture.
  13. 13Add the bloomed yeast mixture to the bowl.
  14. 14Stir the ingredients together.
  15. 15Add water to the mixture.
  16. 16Continue stirring until a dough forms.
  17. 17Knead the dough with your hands.
  18. 18Place the dough on a cutting board.
  19. 19Score the top of the dough with a knife.
  20. 20Pour olive oil over the scored dough.
  21. 21Brush the olive oil evenly over the dough.
  22. 22Place the dough in the oven to bake.
  23. 23Remove the baked bread from the oven using an oven mitt.
  24. 24Place the bread on a cooling rack.
  25. 25Transfer the bread to a bread basket lined with a cloth.
  26. 26Slice the bread.
  27. 27Serve the bread with honey or a dip of choice.

  • 3 cups whole wheat flour
  • 1.5 cups barley flour
  • 0.25 cups millet flour
  • 2 tablespoons spelt flour
  • 1 cup cooked lentils
  • 1.75 cups water
  • 2.25 teaspoons active dry yeast
  • 2 teaspoons salt
  • olive oil

Tips

  • The yeast is not totally accurate to the ancient recipe but gives a nice rise to the bread.
  • Start with 1.5 cups of water and add the last 0.25 cup only if the dough is too wet.
