1Prepare the pastry by rubbing cold butter into flour until it looks like breadcrumbs. Then mix in sugar and two whole eggs.
2Peel and chop apples into slices.
3In a pan mix apples, orange zest, ginger, cinnamon, vanilla bean paste and sugar.
4Divide the pastry into two equal parts. One part will be the base, and the other will be the lid. Cover both parts with cling film and chill in the fridge.
5Roll out the base pastry and place it into a tart tin. Put the apple mixture on the base and roll out the other pastry to make a lid.
6Mix the egg white with a little bit of water to make a glaze and paint the lid of the pie with it.
7Bake in the oven for 50 minutes.
8For the custard: heat double cream, add vanilla bean paste, whisk in egg yolks with caster sugar, and mix until well combined.
