Start by adding olive oil to a Dutch oven over medium-high heat.
Season chicken breasts with salt, pepper, garlic powder, and onion powder.
Brown the chicken on both sides in the Dutch oven to create a fond at the bottom of the pan. You are not trying to cook it all the way through at this point.
Remove the browned chicken and set aside to rest.
Add a knob of butter to the Dutch oven, then add a small chopped onion and cook until softened.
Add lots of chopped carrots, celery, and mushrooms to the pot and cook them down.
Add a generous amount of minced garlic to the vegetables and cook for a minute or two until fragrant.
Add flour to the pot, aiming for a 1:1 ratio with the butter, and stir to create a roux. Make sure to cook out the raw flour taste.
Pour in 4 cups of reduced sodium chicken broth while whisking to combine with the roux and vegetables.
Add 2 cups of heavy cream to the soup, stirring well.
Add two boxes of Ben's Original Long Grain & Wild Rice (Fast Cook) to the soup, along with the seasoning packets that come with the rice. Stir to combine.
Cover the pot and let the rice cook.
While the rice is cooking, cube up the browned chicken.
Once the rice is cooked, add the cubed chicken back into the soup; it will finish cooking through in the hot soup.
Stir everything together and let it sit briefly to meld flavors.
Serve and enjoy your wild rice and chicken soup.
