1Mix together three quarters of a cup of warm water with one teaspoon of active dry yeast and let it sit for five minutes.
2Mix in half a tablespoon of melted butter, half a tablespoon of brown sugar, and half a teaspoon of salt.
3Slowly start mixing in one and a half to two cups of bread flour until a cohesive ball of dough forms.
4Knead the dough on a floured surface for five minutes and then form it into a bowl. Cover it with a dry kitchen towel and a slightly damp towel on top to keep it moisturized, and then let it sit for an hour.
5Punch the dough down and cut it into two even pieces, then stretch the dough into a long rope and form it into a pretzel shape.
6Cover your pretzels and let them sit for at least 30 minutes to another hour.
7For the baking soda bath, add a tablespoon of brown sugar, a quarter cup of dark beer, and about half a cup or more of baking soda to a pot of water and bring it to a simmer.
8Add your pretzels to the bath for 30 seconds on each side, and then add them to a baking sheet and sprinkle them with coarse salt.
9Bake them at 425 degrees until they're golden brown, and then brush on some melted butter.
