Directions

  1. 1Preheat pan or wok until smoking.
  2. 2Stir fry in small batches to ensure each part of the dish gets some charred edges.
  3. 3Soften the thin rice noodles in a large bucket of cold water, but do the actual cooking in the pan during the stir-frying process.
  4. 4Microwave the fresh wide rice noodles to soften and then break them up by hand.
  5. 5Start with a single aromatic like garlic or shallot in oil, then add some egg, protein and vegetables, and the noodles.
  6. 6Soften the noodles with a sweet mix of soy sauces and maybe oyster sauce, which is used in nearly every dish.
  7. 7Add the pad thai sauce, which has tamarind, sugar, and fish sauce.
  8. 8Adjust specific dishes with aromatics to dial in their flavor, maybe chili flakes for added spice, or basil, and garlic chives for different herbal notes.
  9. 9Finish almost every order with a splash of vinegar.
