Throw two blocks of cream cheese into your crock pot.

Dump two cans of fiesta corn right on top of the cream cheese.

Add 16 oz of pepper jack to the crock pot.

Ploop a quarter cup of sour cream on top.

Chop a handful of cilantro and sprinkle it over everything.

Add as much Tajin as you want.

Put the lid on the crock pot, set it for two hours on low, and hit start.

Wait an hour, then stir the dip thoroughly.

Put the lid back on and hit start again.

Once two hours are up, take the lid off and stir everything.

Add some Cotija crumbly cheese.

Optionally, add more cilantro and Tajin for color.

0.25 cup sour cream
1 handful cilantro, chopped

Tips
Stir the dip halfway through cooking to combine ingredients.
