1Chop up two leeks and some carrots and add it to a food processor.
2In a soup pot over medium-high heat, add some oil.
3Once warm, add in a whole chopped onion and the processed veggies; sauté until soft.
4Add in minced garlic.
5Add in two pounds of ground beef.
6Add garlic powder, cumin, chili powder, oregano, smoked paprika, and coriander. Add salt and pepper to taste. Mix and cook the beef all the way through.
7Add two cups of beef broth and a 28 ounce can of crushed tomatoes.
8Get to a simmer, cover and cook for about 30 minutes.
9Prepare Jiffy cornbread mix according to the box.
10Preheat oven to 400F.
11Remove from heat and add cornbread mixture on top.
