Crispy Honey Garlic Chicken Fried Rice

Directions

  1. 1Add salt reduced soy sauce, garlic, black pepper, and onion powder to your chicken, then mix it well.
  2. 2Add the chicken to a Ziploc bag with potato starch and mix until fully coated.
  3. 3Spray the coated chicken with light cooking oil and air fry until golden and crispy.
  4. 4To a pan on medium heat, add frozen mixed vegetables, followed by mixed eggs.
  5. 5Let the vegetables and eggs cook through and mix well.
  6. 6Add the white part of the spring onion, followed by day old cooked white rice.
  7. 7Add a little bit of soy sauce, mix well, then add the green part of the spring onion and mix well to combine.
  8. 8For the honey garlic sauce, to a pan on medium heat, add garlic, equal parts water and soy sauce, reduced sugar ketchup, rice vinegar.
  9. 9Add cornflour mixed with water to the sauce to help it thicken.
  10. 10Take the sauce off the heat, add honey, and mix once more.
  11. 11Coat the chicken in the sauce.
  12. 12Divide everything into seven equal servings.

  • 1.05 kg Diced Boneless & Skinless Chicken Breast (raw weight)
  • 35 ml Salt Reduced Soy Sauce (Kikkoman)
  • 2 Garlic Cloves, minced
  • 0.5 Tsp Black Pepper
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 100 g Potato Starch (not all used, roughly 40g sticks to the chicken)
  • 500 g Frozen Mixed Vegetables
  • 4 Eggs
  • 200 g Egg Whites (or 5 whole eggs)
  • 30 g Spring Onion, white part only
  • 980 g Day Old Cooked White Rice
  • 40 ml Salt Reduced Soy Sauce
  • 20 g Spring Onion, green part only
  • 5 Garlic Cloves, minced
  • 60 ml Salt Reduced Soy Sauce
  • 60 ml Water
  • 100 g Reduced Sugar Ketchup
  • 25 ml Rice Wine Vinegar
  • 1 Tsp Cornflour
  • 80 ml Water
  • 80 g Honey
