Crispy Rice Salad

Directions
- 1Spread the rice on a baking sheet.
- 2Add chili oil and soy sauce.
- 3Mix well and spread evenly.
- 4Slice cucumber, green onion, avocado, coriander, dill and bell pepper.
- 5Place the slice cucumber, green onion, avocado, coriander, dill and bell pepper into a bowl.
- 6Add peanuts.
- 7In another bowl, combine peanut butter, soy sauce, ketchup, rice vinegar, minced garlic, and water.
- 8Mix well to make the peanut butter dressing.
- 9Add crispy rice, then dressing to the fresh vegetables.
- 10Toss well to combine.
- 11Serve and enjoy!
