2Add potatoes to boiling water and cook until tender.
3While potatoes cook, thinly slice the onions.
4Sear onions in olive oil until caramelized.
5Chop chives and parsley.
6Melt butter in a stainless steel pan.
7Add paprika, cayenne, chilli flakes, crushed garlic, Dijon mustard, lemon zest and juice, chives, parsley, salt and pepper to the melted butter. Whisk to combine.
8Remove from heat. Set aside.
9Mash the cooked potatoes using a potato masher.
10Add roasted garlic cloves and butter to the mashed potatoes.
11Cut ribeye into large, bite sized pieces.
12Season steak with salt and pepper, then sear in a stainless steel pan until browned on all sides.
13Remove steak from pan, cover with cowboy butter.
14Serve steak over mashed potatoes topped with caramelized onions.
