Accordion Potatoes with Cajun Butter

Directions
- 1Place one side of a potato flat on a cutting board between two skewers and cut thinly and vertically.
- 2Flip and repeat on the other side.
- 3Whisk together melted butter, grated garlic, dried oregano, and Cajun seasoning in a bowl.
- 4Arrange potatoes in a single layer on a baking tray and brush with the Cajun garlic butter on both sides.
- 5Bake until the edges are crispy, then finish with one more slather of butter.
