Directions

  1. 1Start with a rack of baby backs, pull off the membrane and coat them in olive oil.
  2. 2Layer your rubs. First, use a pork rub with a little sweetness and spice, press it in; then top with coarse ground salt and pepper.
  3. 3Fire up the smoker to 225 degrees and throw your ribs on. If you got a couple of racks, put them on the top rack to prevent burning.
  4. 4Let them smoke for about an hour, then open them up, spritz them with apple juice and let them smoke an hour more.
  5. 5For the wrap, lay down a little bit of squeeze butter, brown sugar and a little bit of your favorite breakfast syrup.
  6. 6Flip your ribs meat side down, wrap them up tight, and throw them back on the smoker for another hour.
  7. 7Once the bones are sticking out about a quarter of an inch, you can flip them over, coat them in barbecue sauce, and brush on a little bit of the liquid from the wrap.
  8. 8Let them smoke for one more hour, then pull them off, let them rest, and slice into a perfect rack of baby back ribs.
