1Prepare shallots by removing the skin and chopping them.
2In a pot, slowly deep fry the shallots in 1 cup of oil over medium-low heat.
3Remove shallots from oil and set aside the shallot oil.
4In a pot, add 1 tbsp of shallot oil and sauté the pork until slightly brown.
5Add 1 tbsp of rice wine and cook until the alcohol evaporates.
6Add 2 tbsp of sugar and cook for a couple of minutes until melted.
7Add 4 cloves of garlic, 4 slices of ginger, 1 tsp of five spice powder (or 1 star anise, 1 bay leaf, and 1 inch cinnamon stick), and 1/2 tsp of white pepper powder.
8Cook until you can smell the flavor of the spices.
9Add 3/4 cup of light soy sauce and 1 tbsp of dark soy sauce.
10Add 10-12 hard-boiled eggs (optional).
11Add 650 ml of hot water and the fried shallots.
12Cover and cook over medium-high heat for 10 minutes.
13Turn the heat to low and simmer for 45 minutes.
14Let everything marinate in the pot for at least 8 hours.
