Directions
- 1Add 4 cups of all-purpose flour to a large bowl.
- 2Add 2 teaspoons of salt to the flour.
- 3Add 1 teaspoon of baking powder to the flour.
- 4Mix the dry ingredients using a whisk.
- 5Add a quarter cup of bacon fat to the dry ingredients.
- 6Add 2 cups of hot water to the mixture.
- 7Toss the flour into the water and fold it in to mix, forming a dough.
- 8Remove the dough from the bowl once it no longer sticks and form it into a ball.
- 9Place the dough ball in a plastic bag to rest for a few minutes.
- 10Portion out small pieces of dough and form them into small balls.
- 11Lightly flour your working surface.
- 12Roll the dough from the center out and then back towards you.
- 13Flip the dough over and repeat the rolling process, turning the tortilla a quarter turn each time until it reaches the desired size and consistency.
- 14Place the rolled tortilla on a hot cast iron griddle to cook.
- 15Flip the tortilla once it starts to show brown spots and bubbles, then remove it once cooked through.

Tips
