Directions

  1. 1Add 4 cups of all-purpose flour to a large bowl.
  2. 2Add 2 teaspoons of salt to the flour.
  3. 3Add 1 teaspoon of baking powder to the flour.
  4. 4Mix the dry ingredients using a whisk.
  5. 5Add a quarter cup of bacon fat to the dry ingredients.
  6. 6Add 2 cups of hot water to the mixture.
  7. 7Toss the flour into the water and fold it in to mix, forming a dough.
  8. 8Remove the dough from the bowl once it no longer sticks and form it into a ball.
  9. 9Place the dough ball in a plastic bag to rest for a few minutes.
  10. 10Portion out small pieces of dough and form them into small balls.
  11. 11Lightly flour your working surface.
  12. 12Roll the dough from the center out and then back towards you.
  13. 13Flip the dough over and repeat the rolling process, turning the tortilla a quarter turn each time until it reaches the desired size and consistency.
  14. 14Place the rolled tortilla on a hot cast iron griddle to cook.
  15. 15Flip the tortilla once it starts to show brown spots and bubbles, then remove it once cooked through.

Tips

  • Rest the dough for a few minutes to let the glutens relax.
  • Practice rolling from the center out and turning the tortilla a quarter turn each time to achieve the desired size and consistency.
