  1. 1In a large bowl, add all-purpose flour, salt, and baking powder.
  2. 2Whisk all the dry ingredients together until well combined.
  3. 3Heat up one cup of water and melt in one stick of unsalted butter.
  4. 4Slowly add the water-butter mixture to the flour and start mixing it with your hands until it gets crumbly like wet sand.
  5. 5Add the rest of your water and continue to knead the dough for about 10 minutes until it looks smooth and doesn't stick to the bowl.
  6. 6Once you're done kneading, leave the dough in the bowl and cover it with a damp paper towel. Let it rest for about 10 to 15 minutes.
  7. 7Lightly flour a flat surface and place your ball of dough on it. You can weigh your dough to get exact same size tortillas, or you can just cut the ball as evenly as you can.
  8. 8Form your dough pieces into balls with a smooth top by tucking the dough to the bottom until the top looks nice and smooth.
  9. 9Keep the dough balls covered with a damp paper towel so that your dough doesn't form a crust, which makes it harder to roll them out.
  10. 10Roll out your tortillas using a rolling pin.
  11. 11Once your tortilla is thin, head over to your preheated comal. You want your comal to be hot, so keep it on medium heat the entire time.
  12. 12Lay your tortilla down and wait for bubbles to form. Once you see a lot of bubbles, flip it.
  13. 13When that side starts to puff up, flip it one more time so that it starts inflating all the way. You can also use a spatula to press down and help it puff up.
  14. 14To test if you have a good flour tortilla, do the crumple test. If you can crumple it without it cracking, then it's good.
  15. 15Don't forget to make yourself a butter and salt tortilla.

Tips

  • Keep rotating the tortilla when rolling it out to roll all sides evenly. If your tortilla starts to get funky edges, just use your hands to stretch them out.
