Jalapeño, Pepper Jack, and Bacon Corn Pudding

Directions

  1. 1Whisk two large beaten eggs in a bowl.
  2. 2Add 1 cup of full-fat sour cream to the eggs and whisk until combined.
  3. 3Pour 1 stick of melted unsalted butter into the mixture and whisk.
  4. 4Add 1-2 tablespoons of hot honey and whisk it into the mixture.
  5. 5Add 1 can of whole kernel corn and 1 can of cream-style sweet corn to the bowl.
  6. 6Add 2 fresh diced jalapeños and 1 can of mild green chiles.
  7. 7Season with a pinch of salt and black pepper.
  8. 8Add 1½ to 2 cups of shredded pepper jack cheese.
  9. 9Add 1 lb of crumbled bacon, reserving some for topping.
  10. 10Mix all the ingredients together.
  11. 11Add 1 box of Jiffy Corn Muffin Mix and fold it into the mixture.
  12. 12Grease a baking dish with butter.
  13. 13Pour the mixture into the greased baking dish.
  14. 14Top with more shredded pepper jack cheese.
  15. 15Place fresh jalapeño slices on top.
  16. 16Bake in the oven until golden brown.
  17. 17Once out of the oven, hit it with some flaky salt.
  18. 18Add more crumbled bacon on top.
  19. 19Drizzle with hot honey.
  20. 20Garnish with fresh chives.

  • 1 box Jiffy Corn Muffin Mix
  • 1 stick unsalted butter, melted
  • 2 large eggs, beaten
  • 1 can whole kernel corn, drained
  • 1 can cream-style sweet corn
  • 1 cup full-fat sour cream
  • 1 tbsp hot honey
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 lb bacon, cooked until crisp and crumbled
  • 2 fresh jalapeños, seeded and finely diced
  • 1 can mild green chiles
  • 1.5 cups shredded pepper jack cheese

  • chopped chives for garnish

Tips

  • You can use pickled jalapeños and even some of the pickled jalapeño juice for extra flavor.
  • Use whatever cheeses you like; pepper jack and cheddar are suggested.
  • If making for Thanksgiving, consider making two as there won't be any leftovers.
