Jalapeño, Pepper Jack, and Bacon Corn Pudding

Directions
- 1Whisk two large beaten eggs in a bowl.
- 2Add 1 cup of full-fat sour cream to the eggs and whisk until combined.
- 3Pour 1 stick of melted unsalted butter into the mixture and whisk.
- 4Add 1-2 tablespoons of hot honey and whisk it into the mixture.
- 5Add 1 can of whole kernel corn and 1 can of cream-style sweet corn to the bowl.
- 6Add 2 fresh diced jalapeños and 1 can of mild green chiles.
- 7Season with a pinch of salt and black pepper.
- 8Add 1½ to 2 cups of shredded pepper jack cheese.
- 9Add 1 lb of crumbled bacon, reserving some for topping.
- 10Mix all the ingredients together.
- 11Add 1 box of Jiffy Corn Muffin Mix and fold it into the mixture.
- 12Grease a baking dish with butter.
- 13Pour the mixture into the greased baking dish.
- 14Top with more shredded pepper jack cheese.
- 15Place fresh jalapeño slices on top.
- 16Bake in the oven until golden brown.
- 17Once out of the oven, hit it with some flaky salt.
- 18Add more crumbled bacon on top.
- 19Drizzle with hot honey.
- 20Garnish with fresh chives.

- 1 box Jiffy Corn Muffin Mix
- 1 stick unsalted butter, melted
- 2 large eggs, beaten
- 1 can whole kernel corn, drained
- 1 can cream-style sweet corn
- 1 cup full-fat sour cream
- 1 tbsp hot honey
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 lb bacon, cooked until crisp and crumbled
- 2 fresh jalapeños, seeded and finely diced
- 1 can mild green chiles
- 1.5 cups shredded pepper jack cheese

- chopped chives for garnish

Tips
- You can use pickled jalapeños and even some of the pickled jalapeño juice for extra flavor.
- Use whatever cheeses you like; pepper jack and cheddar are suggested.
- If making for Thanksgiving, consider making two as there won't be any leftovers.
