Pour the whisked eggs into a greased baking dish.
Add chives, salt, and pepper to the eggs.
Bake the egg mixture in the oven at 200°C / 400°F for 10-15 minutes until cooked.
Slice the cooked egg into 6 equal pieces.
In a separate bowl, add 720g of extra lean pork mince (or beef mince).
Add salt, pepper, onion powder, garlic powder, thyme, sage, and smoked paprika to the mince.
Mix all the ingredients together.
Form 6 equal patties from the mince mixture.
Cook the patties on a pan over high heat.
Toast the English muffins.
Assemble each McMuffin: place a slice of cheddar cheese on the bottom half of a toasted English muffin.
Place one meat patty on top of the cheese.
Place one egg slice on top of the meat patty.
Optionally, add 20g of Sriracha Mayo on the top bun.
Place the top bun on the McMuffin.
Repeat the process for the other 5 McMuffins.
Store the assembled McMuffins in the fridge or freezer.

Tips
To reheat: remove from foil, microwave on each side for 1 minute, then oven bake at 200°C / 400°F for 5-7 minutes. Cut the muffin in half to ensure it's warm in the middle; if not, bake for an additional few minutes.
