1
Take about one and a half pounds of really thinly sliced steak, put a little oil on them, and season them well with salt and pepper.
2
Cook the seasoned steak in a hot pan for about a minute and a half on each side until done.
3
While the steak is cooking, chop up two bell peppers and one onion.
4
Once the steaks are finished cooking, remove them from the pan.
5
Add a few tablespoons of butter to the same pan and let it melt.
6
Add the chopped bell peppers and onion to the pan and cook for a few minutes until tender.
7
Add a big scoop of minced garlic to the tender vegetables and cook for another minute.
8
Add one can of undrained tomatoes with green chilies to the pan.
9
Add three cups of low sodium beef broth and three cups of instant rice to the pan.
10
Stir everything up really well and let it boil.
11
While the rice is cooking (which will take about five to eight minutes), slice the cooked steak into bite-sized pieces.
12
Season the sliced steak really well with Slap Ya Mama seasoning and a packet of taco seasoning.
13
Heat up about 3/4 cups of queso.
14
Once the rice is cooked through, spread the heated queso on top.
15
Top the rice and queso with the sliced steak.
16
Add a little bit more queso to the top as desired.
