Directions
- 1Chop the small onions into quarters.
- 2Chop the main tomatoes into quarters or halves, depending on their size.
- 3Place the chopped tomatoes, cherry tomatoes, onions, garlic bulb, and basil stems on a parchment-lined baking sheet.
- 4Drizzle olive oil over the vegetables.
- 5Season with salt, Italian seasoning, smoked paprika, and black pepper.
- 6Mix all ingredients on the baking sheet to ensure even coating.
- 7Roast the vegetables in the oven at 400 degrees Fahrenheit for approximately 35-45 minutes until tender and slightly charred.
- 8Transfer the roasted vegetables to a blender.
- 9Add chicken broth (or vegetable broth) to the blender.
- 10Blend until smooth.
- 11Strain about half of the blended soup through a sieve into a pot to achieve a smoother texture.
- 12Add about a quarter cup of heavy cream to the soup in the pot.
- 13Cover the pot and let the soup simmer while preparing the grilled cheese.
- 14Slice the Hawaiian rolls into three pieces using a serrated knife.
