Smoked Chicken Bombs

Directions

  1. 1Brown 1 pound of hot breakfast sausage and let it cool in a bowl.
  2. 2Dice pickled jalapeños.
  3. 3Mix the sausage with cream cheese, shredded cheese, and diced jalapeños.
  4. 4Add barbecue rub and mix well.
  5. 5Lay out thinly sliced chicken breasts and trim them into even pieces.
  6. 6Season the chicken breasts with barbecue rub on both sides.
  7. 7Add a scoop of the sausage and cheese mixture to each chicken breast.
  8. 8Roll up each chicken breast, wrap it in 3 slices of bacon, and secure it with toothpicks.
  9. 9Fire up the smoker to 250 degrees and place the chicken bombs on the grates.
  10. 10Smoke for about 2 hours, until the bacon is crispy and the chicken is cooked through.
  11. 11Finish with barbecue sauce.
