Brown 1 pound of hot breakfast sausage and let it cool in a bowl.

Dice pickled jalapeños.

Mix the sausage with cream cheese, shredded cheese, and diced jalapeños.

Add barbecue rub and mix well.

Lay out thinly sliced chicken breasts and trim them into even pieces.

Season the chicken breasts with barbecue rub on both sides.

Add a scoop of the sausage and cheese mixture to each chicken breast.

Roll up each chicken breast, wrap it in 3 slices of bacon, and secure it with toothpicks.

Fire up the smoker to 250 degrees and place the chicken bombs on the grates.

Smoke for about 2 hours, until the bacon is crispy and the chicken is cooked through.

Finish with barbecue sauce.
