3Add light cooking spray, garlic powder, paprika, salt and pepper to the potatoes.
4Air fry the potatoes at 390 degrees for 20 minutes.
5Finely chop a white onion.
6Add the chopped onion into a hot skillet and let it dance until it's nice and golden brown.
7Add minced garlic to the skillet.
8Add lean ground beef to the skillet.
9Add taco seasoning and tomato paste to the beef and let it dance until it is nice and fully cooked.
10To make the creamy chipotle sauce, add non-fat Greek yogurt, chipotle pepper in adobo + adobo sauce, garlic, juice of lime, and salt to taste into a blender.
11Blend until the sauce is nice and smooth.
12Add the cooked potatoes into a bowl.
13Add the cooked ground beef mixture on top of the potatoes.
14Top with shredded lettuce and shredded cheddar cheese.
15Drizzle the creamy chipotle sauce over the bowl.
16Enjoy your high-protein beef taco bowl.
