Season beef with salt, pepper, and garlic powder.

Lightly dredge in flour, shaking off excess.

Heat oil in a large skillet or Dutch oven over medium-high heat.

Brown beef in batches until deeply golden.

Remove and set aside.

Reduce heat to medium.

Add butter if needed.

Whisk in flour and cook 2–3 minutes until lightly browned.

Slowly whisk in warm beef broth, scraping up browned bits.

Add Worcestershire and black pepper.

Return beef to the pot.

Cover and simmer on low 1–1½ hours, until beef is fork-tender and sauce is thick.

Boil egg noodles according to package directions.

Drain.

Stir noodles directly into the thick brown sauce or serve beef over noodles.

Serve hot and heavy — gravy coating everything.

0.5 cup all-purpose flour (for dredging)
3 tbsp oil or butter
Pan drippings
3 tbsp butter (if needed)
3 tbsp all-purpose flour
3 cups warm beef broth
1 tsp Worcestershire sauce
1 tsp black pepper
Salt, to taste
12 oz wide egg noodles
