1Start by taking 1 nice salmon paving and slide the blade of your knife between the skin and the flesh to remove it.
2Cut your into sections not too big and place them in 1 dish.
3Add 2 cloves of crushed garlic, 1 little sesame oil, 1 good dose of soy sauce, the juice of a yellow lemon and 2 beautiful spoons of mountain honey.
4Let your fish marinate like this, aside.
5In the meantime, place the flesh of 2 avocados in the bowl of a mixer.
6Add 2 squares of fresh cheese, the juice of a lime, 1 drizzle of olive oil, some spices, you salt and mix it all together until you get 1 smooth avocado cream and thin.

13Let it reduce for a few minutes, add 1 small spoonful of cornstarch to thicken it 1 little and there you go, your sauce is ready!
14Then spread the guacamole on the bottom of a plate, gently slice the salmon and place the ingredients nicely on the guacamole.
15Add the hot sauce on top, 1 little sebette to finish and that's it, your salmon Tataki with garlic and honey sauce is ready!
