Finely chop the onion and ginger.

Sauté the chopped onion and ginger over medium heat in a little fat.

Mix the ground meats with soy sauce, mirin, salt, breadcrumbs, and the egg.

Add the sautéed onions to the meat mixture.

Form the mixture into kibbles.

Bread the kibbles by passing them in flour, then in beaten egg, then in breadcrumbs, then again in beaten egg, and finally in breadcrumbs.

Heat the oil to 170 °C.

Fry the kibbles for 4 to 5 minutes, turning halfway through cooking.

Remove the fried kibbles and place them on a paper towel to drain.

For the tonkatsu sauce, combine all sauce ingredients in a saucepan.

Bring the sauce to a boil.

400 g ground beef
200 g ground pork
1 onion
2 cm chopped ginger
1 egg
1 tablespoon soy sauce
1 tablespoon mirin
0.5 teaspoon salt
1 tablespoon breadcrumbs
sunflower or grapeseed oil

2 beaten eggs
panko breadcrumbs
15 cl Soy sauce
5 cl mirin
4 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 tablespoon bitter orange jam
1 tablespoon cherry jam (or jam of your choice)

Tips
If you don't eat pork, use only ground beef, but ask your butcher for fatty beef.
For the tonkatsu sauce, you can buy commercial sauce or make your own.
Double breading (flour, beaten egg, breadcrumbs, then egg again, then breadcrumbs) for extra crispiness.
An air fryer can be used instead of deep frying.
