Manchikatsu (Japanese Minced Meat Kibbles)

Directions

  1. 1Finely chop the onion and ginger.
  2. 2Sauté the chopped onion and ginger over medium heat in a little fat.
  3. 3Mix the ground meats with soy sauce, mirin, salt, breadcrumbs, and the egg.
  4. 4Add the sautéed onions to the meat mixture.
  5. 5Form the mixture into kibbles.
  6. 6Bread the kibbles by passing them in flour, then in beaten egg, then in breadcrumbs, then again in beaten egg, and finally in breadcrumbs.
  7. 7Heat the oil to 170 °C.
  8. 8Fry the kibbles for 4 to 5 minutes, turning halfway through cooking.
  9. 9Remove the fried kibbles and place them on a paper towel to drain.
  10. 10For the tonkatsu sauce, combine all sauce ingredients in a saucepan.
  11. 11Bring the sauce to a boil.
  12. 12Serve hot.

  • 15 cl Soy sauce
  • 5 cl mirin
  • 4 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon bitter orange jam
  • 1 tablespoon cherry jam (or jam of your choice)

Tips

  • If you don't eat pork, use only ground beef, but ask your butcher for fatty beef.
  • For the tonkatsu sauce, you can buy commercial sauce or make your own.
  • Double breading (flour, beaten egg, breadcrumbs, then egg again, then breadcrumbs) for extra crispiness.
  • An air fryer can be used instead of deep frying.
