Caramelized Onions

Directions

  1. 1Slice the onion into super thin julienne strips.
  2. 2Heat a pot or pan on a high heat and drizzle in some oil.
  3. 3Add the sliced onion and a pinch of salt to the pot.
  4. 4Add a pinch of baking soda to the onions.
  5. 5Stir the onions occasionally, allowing them to burn slightly.
  6. 6When the bottom of the pot starts to burn, add a few drops of water to deglaze and incorporate the caramelization back into the onions.
  7. 7Repeat the process: wait until the bottom is golden brown, then deglaze it again with water.
  8. 8Once the onions are perfectly caramelized, add a knob of butter.
  9. 9Optionally, add a few drops of soy sauce to enhance the umami flavor.
