Potato Stacks with Garlic Herb Butter

Directions

  1. 1Slice potatoes using a mandoline.
  2. 2Melt butter in a saucepan.
  3. 3Mince garlic.
  4. 4Add minced garlic to the melted butter.
  5. 5Chop parsley.
  6. 6Chop thyme.
  7. 7Add parsley and thyme to the butter and garlic mixture.
  8. 8Season with salt and pepper.
  9. 9Cool the butter mixture before adding it to the potatoes.
  10. 10Pour the butter mixture over the sliced potatoes and toss to coat.
  11. 11Place a small sprig of thyme in each cup of a muffin tin.
  12. 12Stack potato slices from smallest to largest in each muffin cup.
  13. 13Sprinkle grated parmesan between layers of potatoes.
  14. 14Continue stacking potatoes until each cup is full.
  15. 15Wrap the muffin tin tightly in foil.
  16. 16Bake in a 375°F oven for 25 minutes or until potatoes are tender.
  17. 17Crank the oven up to 425°F and finish them uncovered for another 15 minutes or until crispy on the edges and creamy in the center.
