Directions

  1. 1In a pot, sauté 1 cup diced carrots, 1 cup diced celery, and 1 small diced onion.
  2. 2Add 32 ounces of chicken broth.
  3. 3Add 2 large diced chicken breasts and cover until cooked.
  4. 4Break up and add 8 oz cream cheese and stir.
  5. 5Add 1 cup of water.
  6. 6Add 1 1/2 cup heavy cream.
  7. 7Add 2 cups elbow pasta, 1 teaspoon chicken bouillon, and a bay leaf.
  8. 8Add 3/4 cup mozzarella and 3/4 cup cheddar cheese.
  9. 9Stir in 1/2 cup chopped spinach.
  10. 10Remove from heat when pasta is al dente and cover. It will thicken and continue to cook upon standing.
